I know, I spelled crazy wrong. But there is a sense of madness that ensues once you fall in love with kale. But of course, kale isn’t for everyone just like there is no perfect diet. For me, kale belongs in everything from smoothies to pizza. Yes. I said pizza. If I could have my ideal healthy but delicious pizza it would have kale all up on it.
I love foods that are versatile but also give you the opportunity to use them before going bad. That’s the thing about kale. It kind of forces you to use it up real quick. So I find myself sneaking it into my boyfriend’s quiche, smoothies (ssssh, he’ll freak out), topping pita pizza’s with it and even massaging the crap out of it for a powerful salad. For dinner last night, as I was awaiting this supposed snowpocalypse (big whoop, 7 inches) I decided to embark on a kale journey making a creamy massaged kale salad AND even a pita pizza. Yup. I said pita pizza. Grab your kale ya’ll. You’re in for a fun ride.
Creamy Massage Kale
What You Need:
- 1/2 bunch of dark kale (lacinato or dinosaur kale is great for this), washed and stems removed
- 1 ripe hass avocado, pit and skin removed
- 1/2 cup raw almonds, roughly chopped
- 1 lemon, juiced
- 2 tablespoons of extra virgin olive oil
- Himalayan pink salt, black pepper and garlic powder to taste
How You Make It:
- In a large bowl combine kale, olive oil and lemon juice. Roll up your sleeves and start to gently massage the kale with the oil and lemon juice. Massage until the kale starts to get wilted. (Note: This means your lovely kale has activated it’s nutrient rich quality and once you eat it, it’s easier to digest. WINNING!)
- Stir in avocado and lightly mash to combine. Add almonds and season with salt, pepper and garlic.
- Enjoy with a fork and a smile.

Kool Kale Pita Pizza for One
What You Need:
- 1 organic whole grain pita
- 1/2 cup organic buffalo mozzarella, shredded by hand
- 2 tablespoons organic marinara sauce
- 1 heaping cup of kale (massaged with 1 tablespoon of olive oil, seasoned with sea salt, pepper and garlic)
- Other veggie toppings you may like
How You Make It:
- Preheat your sexy loving oven to 350 degrees F.
- Assemble your pita pizza with cheese first (this is important to prevent sogginess), lightly spread marinara and top with your super awesome kale (or any other veggie you like).
- Pop in oven for 15 minutes or until golden and cheese is bubbly.
- Enjoy pure kale bliss!
