No Way It’s Vegan Mac n Cheese

A few weeks ago I had to put myself in the mindset of a child and think about the things they would truly enjoy for my first ever kids cooking class. And to be honest, that was SUCH a challenge! Kids are picky! How the hell was I going to get the pickiest of eaters to eat healthfully AND enjoy veggies with so much flavor?!

I thought…hmm…kids seem to really enjoy mac n cheese. So, cleverly thought I could hide some veggies (ahem butternut squash) in the cheese sauce while also giving kids the option to add in their fave veggies. You’d be surprised, some actually chose to add broccoli to their mac n cheese and those who didn’t still got a dose of veg with the butternut squash hiding in plain sight in the cheese sauce.

For those of you who want a super cheesy but still nourishing baked mac, I’ve provided an additional version for your pleasure 😉 A little something something for all mac n cheese lovers, vegan or not.

The weather is cooling down and you know what that means?! It’s time for soups, casseroles, hearty meals and time to buckle down and find our rooting. And might I add time for the awesome holiday’s. I’m already in the process of brainstorming ideas for recipes to wow my family especially with vegetables they haven’t tried before and in combinations that really represent the heart of the season.

Bananas for Banana Bread

Over the last few weeks or so I have found myself really drawn to self-care and self-love. I wake up slowly, move slowly, don’t force myself to adhere too strict of deadlines to keep me less anxious. I’m also treating myself to really grounding, calming foods. Yeah, that is totally a treat to me. As weird as that may sound to some, taking the conscious effort and making the time to create something is absolutely an act of self-love and self-care.

Sinfully Simple Veggie Pot Pies

Happy Friday darlings! I’m sitting here, cozied up on the couch planning for the month of April (can you believe April starts next week?!) and reflecting on last night’s workshop. Yesterday, I co-hosted a workshop with a wonderful yoga teacher, Erica, from Nueva Alma Yoga and Wellness Studio. She led our class through a soulful yoga flow while I led one of my first (not in my home) cooking demos. Holy cow! You know, I am amazed at how obvious the signs from the Universe are when we just listen. For real though. I kid you not. There was something absolutely natural and free-ing about leading the cooking demo and I really felt I was in my element. You besta believe, I’m gonna do more of these thangs 😉

Krazy for Kale

I know, I spelled crazy wrong. But there is a sense of madness that ensues once you fall in love with kale. But of course, kale isn’t for everyone just like there is no perfect diet. For me, kale belongs in everything from smoothies to pizza. Yes. I said pizza. If I could have my ideal healthy but delicious pizza it would have kale all up on it.
