Protein Powered Mason Jar Muesli

Wait…what in the heck is a Muesli?!

For the last few weeks, I’ve been packing my breakfasts for work (in addition to my daily green smoothie)…and besides the usual overnight oats, I decided to give Muesli a go. And besides, I have some kickass protein powders that I figured belonged in my breakfast (and no longer in my smoothie…I think I over did it for the last month, so I’m all about switching thangs up).

But wait…for realz, what is muesli?

According to our friend the Dictionary and Wikipedia, muesli is a: breakfast and brunch dish based on raw rolled oats and other ingredients including grains, fresh or dried fruits, seeds and nuts, and may be mixed with cow’s milk, soy milk, almond milk, other forms of plant milk, yogurt or fruit juice.

Now, I’m not a fan of mixing oats with juice but I’m all about the yogurt and almond milk combo. It’s really nourishing, filling and pretty friggin’ deeeeelish.

This recipe makes breakfast even more amazeballs. It keeps you satisfied because it’s jam packed with protein (that Bob’s Red Mill, really hits it on the head), a variety of textures (I’m all about the crunchy) and keeps the body cool. Sometimes hot oatmeal is not sexy on a muggy summer day.

Besides, don’t you think your breakfast could use an upgrade?! I know I like a little variety (here’s my overnight oats recipe…it’s similar and perfectly adaptable).

Spooktacular Green Pumpkin Pie Smoothie

Pumpkins, pumpkins, pumpkins everywhere! And I’m not just talking about the pumpkins all over my house. I kid you not there must be at least 20 (small and large) cleverly arranged for Halloween and fall spirit. Just two days ago Matt and I carved a Nightmare Before Christmas inspired pumpkin that twinkles with grin of Jack Skellington himself. And it’s so badass! Now that’s what I call Halloween spirit.

But aside from the decorating, there is an abundance of pumpkin flavored everything and to be honest, it can be quite sickening. Fall doesn’t have to be all about the fake pumpkin flavored treats and you know it! So I decided it would be fun to turn this pumpkin madness into a spooktacular green smoothie. This baby has all you can want in a fall beverage with some extra protein and is reminiscent of a punkin’ (yes, punkin’) pie. You won’t even realize you’re having something healthy. It will be gone in about three slurps. No joke 😉

Is anyone else confused by this weather!? One day it feels like summer and no more than a couple days later it feels like the dead of winter. Well, I’ve got the perfect cure to the cold weather days…soup. Soup is back, back again…soup is back…tell a friend!

I worked a long day at the farmers market on Sunday and it was FREEZING. I was not prepared for the rapid change in weather. Even with those handy dandy hand and feet warmers, I could not feel my toes or fingers. The end of the work day called for a hot bowl of soup. But not just any soup. Something creamy, comforting and heart warming.

This is the absolute EASIEST cream of mushroom soup that actually has no cream in it. It’s actually vegan.

GASP.

Vegan Pumpkin Spice Latte {With Real Pumpkin}

It amazes me how fall has become a pumpkin crazed season. I mean I’ve seen pumpkin flavored everything…butter, biscuits, bread, cookies. You name it, it probably exists and it’s probably some fake crap that is loaded with additives and chemicals. My favorite pumpkin flavored goodie (aside from my granola) has to be the pumpkin spice latte. But of course, these big coffee peeps have taken it  upon themselves to create fake pumpkin lattes with a ton of sugar that keep us addicted and going back for more.

Save your pennies friends and make this delicious concoction with ease knowing you are actually having a real pumpkin spice latte that’s almost too good to be good for you. But trust me, it is.
