HAPPY DECEMBER ya’ll!

Just like that, it’s time to prepare for Christmas. It’s the most wonderful time of the year!!!! Don’t mind me, I’m on a holiday high, our apartment is almost fully decorated (just need to add snowflakes) and the Christmas music is on 24/7. Not even kidding.

I hope you all had a wonderful Thanksgiving. Legit, it was exhausting. I really enjoy hosting, but sometimes that sh*t is tiring af. From shopping, preparing, cooking, serving, and actually hosting, it’s ALOT of work.

I must admit, however, I had quite the blast.

MY favorite part was creating the ultimate menu that was both seasonally delish and healthy. But mostly delicious 😉

With all the heaviness that is typically associated with the season, I really opt for something light, nourishing and colorful. This is where my massaged kale salad comes in handy.

Hearty winter greens are warming for the soul and loaded with flavor when paired properly. You know not just greens with lemon and salt. Give that sh*t a boost. Add some roasted sweet potato, pomegranate seeds and pepitas. Holy shiz. It’s da bomb dot com.

I’m sure it will be a favorite at your holiday table, and besides, it looks GORGEOUS as a starting course 😉 Great for BRUNCH, LUNCH and DINNER! Yaas.

Beautiful Oven Roasted Veggies

That bitter chill of winter is creeping its way into our lives, our homes and resting in our bones. And I am nowhere near ready for the winter. We have barely had the fall. How about taking a chill pill winter?!

The weather is at that in-between point where the building we are living in has not gotten the memo that it is cold af outside, so there’s no heat yet (we got heat on a 55 degree day, which makes no sense). So what do we do to keep it warm up in here?! ROAST EVERYTHING.

And I mean EVERYTHING.

Things just seem to taste better once basking in the glory that is the oven, including desserts, macaroni smothered in cheese, sweet potatoes, stuffed peppers (you know you love ma recipe, go here). I can go on and on.

But nothing compares to the food orgasm that follows roasting some seasonal veggies.

I’m here to tell you, show you, teach you that this is SUCH A SIMPLE PROCESS and all it truly needs is your time and your love. And a delicious sauce to pour over it (I’m loving tahini, don’t worry the recipe will be yours).

These suckers are so lip smacking good, you will be licking your fingers (I use my hands to eat these, I mean, come on, why wouldn’t you?!). You can easily roast all your veggies and turn this into a meal in itself (not need to be extra if you’re tired, we’re not judging you).

The Easiest Mushroom Soup {For Cold Weather + Rainy Day Cuddling}

HOLY MOLY! You must be wondering where in the heck I have been? No? Maybe? Sorta?

I promise I have not forgotten how to cook.

I just did something pretty awesome.

I got married.

Yes! I am someone’s MRS! He’s not just any someone, he’s freakin’ amazeballs. And we had such a wonderful wedding surrounded by love which was immediately followed by a much-needed honeymoon in Aruba. We took some serious chill time, caught up on our sleep and really embraced the fact that we had the time to just BE together and do absolutely nothing else.

For the last two months, my brain was on overload which ultimately meant I had to upgrade the self-care and hone in on what my body really needed. It totally needed more sleep and more wine, and I was perfectly okay with both. This, of course, meant a few things fell to the back burner. I’m sorry blog! I luh you though boo boo.

This is me keeping myself accountable, I am officially working on my next cookbook. This one is different. It is going to take some serious love and time to make it happen in a grander way. I say grand because there will be over 100 recipes. Yea. That’s one big ass book. But you know me, these recipes have to taste DELISH and be simple enough to actually want to make.

Being in a cooking slump is tough. Sometimes we just get back to the ol’ reliable recipes, the ones that are tried and true and never let us down. For me, soups are my go-to when the weather (A HUGE SHOCK FOR ME after being in 110 degrees F every day) starts to shift and get that slight hint of a winter chill.

I LIVE off of smoothies in the summer and soups in the fall/winter. It’s the best thing…and it LASTS FOREVER.

I like a good soup that holds up on its own without needing much help (you know, flavor wise). This one makes great use of bold and mighty shiitake mushrooms and gives the baby bella mushrooms life. It will feel like this took you hours to make though you will have only taken about 30 minutes out of your day to prep, cook and savor it. Okay, maybe you should take more than a few minutes to actually savor this, but you get the point.

Mighty Mango Salad {Cleanse Approved + Delish}


My fellow New Yorkers and myself have felt the intense sweat fest of the last few weeks which were briefly followed by a few days of Autumn teasing us (you know, with the cool breeze and low temps). But then sister Summer decided she was no where near gone and smacked us in the face with heat. If you thought you could stop eating watermelon and tropical fruits to cool you down, you were wrong.

This is why this salad is the bomb diggity.

Let me give you a few buzz words to get the taste buds ready…because I promise you…you will want this in your belly…or on top of chips before entering your belly. It’s that freakin’ good.

My might mango salad is…

refreshing

hydrating

tangy (love tangy)

detoxifying

but ultimately…cooling.

I know you must be hungry by now. MWAHAHA!

Mighty Mango Salad

Serves 2 (or 1 hungry human)
Total time: 10 minutes (depends on how precise you feel like being)

What You Need:

  • 1-3 radishes, thinly sliced
  • 1 ear of corn (roasted on the fire if you have the patience), kernels removed from the cob
  • 1 avocado, diced
  • 1 humongous heirloom tomato, diced
  • 1 mango, cubed
  • 1 cup of black beans, rinsed
  • 1 scallion, chopped
  • 1/4 cup cilantro, roughly chopped (keep the stems, don’t toss, use ’em up)
  • 1-2 limes, juiced (for extra zestiness)
  • Salt and pepper to taste

How You Make It:

  1. Combine all yummy ingredients in a big bowl.
  2. Season. Set aside for proper flavor mingling. Let’s say about 5 minutes.
  3. Enjoy with chips but a smile…of course 😉

Superfoodie Summer Berry Smoothie {Feel Amazing All Day Errday}


Summer (if didn’t know this already) is my favorite season. It’s besides the glorious heat and outdoor adventures. For me, summer is all about the food. Everything I love is in season. I mean, watermelon JUST showed up at the farmers markets but at least there has been a great selection of berries and cherries. 

I love that the farmers market exposes me to things I normally would not have tried if I went to the grocery store. I mean come on, where can I find fresh gooseberries and black raspberries?!!

Berries and melons are how I survive the summertime. They keep me hydrated, energized  and bikini ready. Well, putting on a bikini and feeling sexy af no matter what you wear is the best way to be bikini ready. I don’t like those weird summer weight loss ads. Who the heck decided what the perfect body for wearing a bikini was anyway?!
Okay enough on that rant 😉

Seriously, summer is my favorite time. And my smoothie game is really on point. Some days I eat way less and miss out on essential nutrients with the sweating. And that’s no Bueno. Total time: 2 mins (too easy not to make everyday!)

What you need:

  • 1-2 cups of spinach or kale
  • 1 avocado (for sexy fat)
  • 1-2 tablespoons of MCT oil ( Medium-chain triglycerides) 
  • 1 heaping scoop Amazing Grass protein (or your favorite plant based superfood protein powder)
  • 1/4 cup black raspberries
  • 1/4 cup blueberries 
  • 1/4 cup blackberries 
  • 1/4 cup dark sweet cherries
  • 1-1 1/2 cup coconut water
  • Ice (optional)

How you make it:

  1. Whiz these sexy ingredients in your blender. 
  2. Flip your hair back and forth and shake your sexy butt cuz baby you’re fine as hell. 
  3. Feel good about yourself for enjoying a superfoodie summertime sexy smoothie.
