NYC got SLAMMED with snow. Winter was tired of our trash talk and decided to show up, give us some snow (okay, lots of snow about 25 plus inches) then bounce, leaving the city in disarray.

So what do you do with a snow day or two (after you play outside because the roads are closed of course)?

The Best Vegan Coquito

Guys and gals, Christmas is upon us (like 2 days away OMG). And do you know what that means?! Egg nog! Okay maybe not exactly. Not in my fiance’s family. His Puerto Rican side of the family is lively, loving and HUGE and one of my favorite things I look forward to each year has to be the coquito. And last year we had a coquito tasting contest (best believe I was judging and enjoying every bit of it-vegan or not).

What in the heck is that?!

It’s a eggnog-like drink made with rum, coconut milk, sweet condensed milk, egg yolks, vanilla, cinnamon, nutmeg, and cloves.

What’s a girl (or guy- but we’re talking about the ladies real quick) to do when it seems easier and ridiculously dirt cheap to pick up a quick meal at the taco spot instead of eating an $11 kale salad!? I know you’re trying to eat healthy, but convenience seems to get the best of you. And that freakin’ sucks. Why does the healthy stuff have to be so damn expensive?! Even though I’m all about eating really really good (high quality may cost some extra dough), I don’t believe in spending every last penny at Whole Foods. You can still eat the good stuff without burning a huge hole in your pocket. Trust me, I have some tips and a look at what I usually spend on a grocery store trip ๐Ÿ˜‰

Kickass Cold Brew Recipe [For Those Hot Days]

I don’t know about you, but a great cup of iced coffee-ahem cold brew- is DIVINE. I’m not a huge iced coffee drinker at any other time but from the months of June to September I am hooked. And with a coffee habit like that, that’s gonna cost some money. When you make it yourself you can really not just save that hole burning in your pocket, you infuse love in every single sip.

But this version is not a freshly brewed coffee that has ice added, it’s a long process (meaning, you have to wait at least 12 hours) but a lot simpler than you think. AND! You’ll have coffee ready for you in the morning without having to the work! That’s pretty awesome.
