Yogi’s Pad Thai

Detoxifying Red Lentil Dahl

Whoa baby, this heat just decided to come out of no where and say heeeeey.

And starting tomorrow I’m getting back on my cool food consumption. This fiery weather really is pushing me towards that simple, clean, light eating but of course, something that still tastes good. Okay I have other factors motivating me as well (running a 7 day cleanse and um…my wedding).

The last few months have flown right on by and our wedding is just about 3 months away at this point. My dress has finally arrived and bestabelieve I tried that thang on. It fits like a glove. But like every bride I’m sure, eating light and making sure everything stays right and tight is top priority.

That’s where this raw salad comes from.

This “pad thai” is not really a pad thai. The sauce is really the main thing that makes me think of pad thai without the added heaviness of noodles. It’s zesty, tangy and filling without leaving you bloated, uncomfortable and dissatisfied. I’m all about that satisfaction.

Detoxifying Red Lentil Dahl

Detoxifying Red Lentil Dahl

Hellooooooo beautiful foodies!!!

I promise I haven’t fallen off the face of the Earth. To be completely honest with you, I’ve been eating the same effin shiznit for the last few weeks (rotating it of course and a few days of eating at my moms house and celebrating some birthdays, mine included). I also finished up my cleanse which seemed to take about 2-3 weeks. The preparation, the testing, the pre-cleanse and the post-cleanse.

So after all of this, I’m ready to get myself back in the kitchen.

We’re in this in-between place right now. It’s warm, the season is really kicking in and we’re getting some new sexy veggies in season. Asparagus anyone?!! And I can’t wait for the Strawberries. Those babies are coming soon. Like 2 weeks! YAAS!

As we are in limbo with the diff veggies coming into season,(and I’m tryna figure out what to make based off of seasonal availability) I’m sticking to the simple foods. This soup, basically the non-Indian way of explaining dahl, is one of those comforting and detoxifying recipes that’s easy to make and it really sticks to your ribs, keep you full and feeling sexy af.

What’s good about this recipe?

  • It’s easy
  • It’s FOODGASMIC (SOOOOOO GOOD)
  • It tastes better over time (leftovers yo)
  • Your poops will be glorious

Need I say more?!!

Not Your Mama’s Tostones

Tempeh Bacon Lettuce & Tomato Sammies

Let’s take a moment to celebrate the fact that #1 this isn’t another sweet potato recipe (although I’m going to do one later this week, so ha) and #2 I’m OFFICIALLY DONE WITH MY 21-DAY SUGAR DETOX!!!!

Okay so technically I finished on Monday but I’m really excited that I can eat my millet bread and PASTA. I can’t forget pasta. I did miss sourdough bread and the Challah of Easter Sunday but…I think I can hang without it. For most of the detox I was really hangry (hungry + angry) and really just wanted to say f*ck it, I’m done, this is stupid. But something inside of me gave me a huge push (besides the internal countdown). I realized this was not forever. A sugar detox is not a way to deprive myself. It’s a way to become more aware and mindful of every part of my body. And I dig that.

Wait, so my point was what?

This sugar purge really gave birth to some freakin’ amazing creativity. I pulled recipes out of my utility belt daily and really focused on creating balanced meals (not 100% sure what that is yet, maybe 80% sure and I’m about 80% ok with that).

And that is where this tostones (fried plantain) recipe came from.

AND for my level of this sugar detox (click here to learn more, in case you’re curious), I was allowed extra starchy veg. Sweet potato was already on my list and on the menu prettttttty much errday. So the plantain became my friend.

I’ve had plantains smashed, fried, molded into a sexy mofongo (look it up- it’s amazeballs), made into crunchy chips. I just never made them myself.

The KEY is to have a vibrant, tangy, citrus sauce to dunk these crispy thangs in.

Better than Reese’s Chocolate Nut Butter Squares

Tempeh Bacon Lettuce & Tomato Sammies (1)

Sometimes a candy bar seems like the cure for all of life’s woes. But seriously, sometimes there is immense comfort in the forbidden foods. This is why I don’t make foods taboo and I usually just find a way to make that pleasurable and decadent item WAY better.

A few weeks ago I had a client who noticed that when she was feeling stressed she would go straight for the Reese’s Peanut Butter cups. These were her drug of choice. The moment she bit into that chocolatey peanut buttery cup that melted as she savored each bite, she felt euphoric. It was like nothing else mattered because it was just her and that peanut butter chocolate orgasm.

Fudgey Vegan Brownie Bites

Tempeh Bacon Lettuce & Tomato Sammies (2)

Ah Valentine’s Day, the day of chocolate…oh and love. I’ve been trying to perfect the ultimate vegan brownie that doesn’t take like sawdust, require more than one or two bowls and makes my honey ask for “more of those chewy amazing brownies.”

It’s hard to find a vegan brownie that doesn’t require a ton of ingredients and that leaves something to be desired. And I can’t seem to find a brand or company that makes them the way I like them, so lo and behold, these baby brownie bites were born. There’s no real elaborate story leading me to this recipe. Honestly, I woke up one day and decided it was time to make a vegan brownie that didn’t taste like crap and didn’t make me feel like crap. I believe indulgence should be full of pleasure and without any guilt or ill feeling the next day. All love baby 😉
