Farmers Market Goddess Salad

img_6204

Summer is in full swing the moment you start to see peaches. Last year we suffered a bit over here in NYC. There were some Jersey peaches but New York State did not get blessed with the juiciness of peaches. It almost felt like it wasn’t quite summer but I didn’t really notice, I was in the midst of wedding planning. This summer I’m giddy and just full blown ecstatic about the arrival of peaches, plums and nectarines. And my friends, they are juicy and ready for your salads and salsas.

I haven’t really gotten creative in the kitchen lately. I’ve been fine with making similar things over and over – if it can be made into a taco I’m going to have it (Siete foods has an amazing Almond Flour tortilla, gluten free AND vegan).   But the emergence of peaches inspires me to experiment a bit  I’m trying to push the envelope with food combos.

Peach and corn are an awesome combo, same with peach and blueberry, peach and tomato even, but I really haven’t gone beyond until this amazing salad.

I kid you not my husband Matt practically inhaled this salad- I even got the happy grumble in between each bite (if that’s what we’re calling it).  I’d call that WINNING!

This salad has everything the farmers market has to offer in the summer: heirloom tomatoes, blueberries, micro greens, fresh peaches, cucumbers, fresh sheeps milk feta. I, of course, add in a few extra things to make it a filling, nourishing salad.

So, what are you waiting for? Get off your butt, go to the farmers market and eat this salad for days and feel awesome!

Massaged Kale, Sweet Potato, Pomegranate Salad

79427

HAPPY DECEMBER ya’ll!

Just like that, it’s time to prepare for Christmas. It’s the most wonderful time of the year!!!! Don’t mind me, I’m on a holiday high, our apartment is almost fully decorated (just need to add snowflakes) and the Christmas music is on 24/7. Not even kidding.

I hope you all had a wonderful Thanksgiving. Legit, it was exhausting. I really enjoy hosting, but sometimes that sh*t is tiring af. From shopping, preparing, cooking, serving, and actually hosting, it’s ALOT of work.

I must admit, however, I had quite the blast.

MY favorite part was creating the ultimate menu that was both seasonally delish and healthy. But mostly delicious 😉

With all the heaviness that is typically associated with the season, I really opt for something light, nourishing and colorful. This is where my massaged kale salad comes in handy.

unnamed-1

Hearty winter greens are warming for the soul and loaded with flavor when paired properly. You know not just greens with lemon and salt. Give that sh*t a boost. Add some roasted sweet potato, pomegranate seeds and pepitas. Holy shiz. It’s da bomb dot com.

I’m sure it will be a favorite at your holiday table, and besides, it looks GORGEOUS as a starting course 😉 Great for BRUNCH, LUNCH and DINNER! Yaas.

Let’s Be Mermaids Seaweed Salad

41612bcba3d563621b8f054b5096ce29

In the last 2 weeks, I have really gained a stronger awareness of my body. I have decided that there are so many opportunities to pivot, shift, make changes that ultimately make me feel like a better me. In my last post, I decided to tell the scale to eff off and that it wasn’t going to determine how I was going to live my life. But I did catch myself making excuses, trying to eat less and really jumping into the judgmental mindset. WHOA girl. Not cool. I nipped that crap right in the bud and said no thanks, I’m good.

Even when we say to ourselves out loud or silently, that we love our bodies and that we feel healthy, light, blissful and free in our own skin, sometimes at the deepest, darkest level we don’t believe it. We start to self-sabotage. And this is when real change starts to happen; right before we begin our self-sabotage. Ain’t that some shit? Come on!

Roasted Corn Salad

2014-03-30 16.31.16

Summer is upon us and I am SO excited!

Seriously…I am really ready for the sunshine, beach weather, warmth, bonding, vacations and everything that comes with the territory of the season.

One of my FAVORITE things about summer has to be the food.

There are so many goodies in season for summer. Peaches, cherries, corn, greens…I can go on and on and on and on.

Summer is really all about eating cooling foods and I have the recipe to keep you cool and satisfied.

So as soon as you hear your tummy grumbling after reading my recipe, head on over to your closest farmer’s market and grab some goodies!

What You Need:

2 ears of corn roasted until slightly browned over open flame or grill, kernels removed and set aside (or you can buy the frozen roasted corn from Trader Joe’s, just defrost the entire bag and use in this salad)

2 avocados, cubed

2 vine ripened tomatoes, diced

2 cloves of garlic, smashed and diced

1 shallot, diced

Juice of 1 lime

Handful of cilantro, roughly chopped

Pink Himalayan Sea Salt to taste

How You Make it:

  1. Combine all ingredients in a large bowl. Season with salt. Serve.

How easy is that? I think I might need a snack after talking about this…

Off to the fridge!

Peace, love and no beef!

Sexy Kale Salad

2014-03-14 14.12.10

Spring is all about getting sexy for summer time. What better way to prepare your body for warmer weather than a light and delicious salad? I thoroughly enjoy eating a light yet filling salad. You can really jazz up a salad with a few change of ingredients, mixing up your greens and trying different dressings to tickle your taste buds.

Earlier this month, I visited Dr. Andrew Weil’s restaurant, True Foods in Newport Beach, CA. I am a huge fan of Dr. Weil and his anti-inflammatory diet. His recipes are mouthwatering and absolutely fabulous. Even my boyfriend who is not a big green juice drinker, tried a kale-aid (kale, apple, cucumber, lemon & ginger juice).  He scarfed down the street tacos (check them out, small, fresh and absolutely divine for the carnivore you love). I ordered his kale crunch salad with avocado, grapefruit, kale, cabbage, watercress, almond and radish with a chili garlic dressing. I could NOT get over how incredible this salad was. I really have not ever tasted a salad this phenomenal. The moment I got home I HAD to recreate this salad.

For you lovers of kale, try this salad for your next meal. I guarantee you will be craving this salad.

What You Need:

For the Salad

  • 1 bag or bunch of Tuscan kale (you can get a bag of organic Tuscan kale from Trader Joes), chopped
  • 1 tbsp organic extra virgin olive oil
  • 1 cup of radishes, sliced
  • 1 red grapefruit, sectioned (skin removed)
  • 1 blood orange, sectioned (skin removed)
  • 1 avocado, sliced
  • 1/2 cup slivered almonds

For the Dressing

  • 3 tbsp organic extra virgin olive oil
  • 1 clove of garlic, minced
  • 1 scallion, chopped
  • Juice of one lime
  • 1 tbsp Sriracha (or more to taste)
  • 1 tsp red chili flakes
  • Sea salt to taste

How You Make It:

  1. Add kale to a large bowl. Drizzle in one tablespoon of olive oil and begin to massage the olive oil into the kale with your hands. Continue to massage until the kale has wilted and slightly darkened (this will remove the bitterness of the kale and bring out the amazing nutrients in this perfect green).
  2. Toss in the rest of the ingredients for the salad. Let sit for a few minutes while you whip up the dressing.
  3. In a small bowl, mix together the ingredients for the dressing. Season with sea salt or a little extra sriracha if you like!
  4. Serve with a little extra slivered almonds for garnish.

Enjoy getting sexy for summer!

Peace, love and NO beef!
