Pardon my slack…

I truly enjoy summer. Summer and spring are probably my two favorite seasons. Main reason? I get to be outside and enjoy nature (more so than the other two seasons). I especially love being able to go to the beach and swimming and those other summertime activities. 

But aside from my love of summer, I’ve been completely immersed in working, freelance writing (pieces to come in Parenting Magazine’s Sept & Oct issues!) and getting into nutrition school (yay me). I’m really excited to start my journey at Institute for Integrative Nutrition in September. I can’t wait to be a certified health coach. I am certain that this is part of my journey to becoming a health editor some day. I still have plans to go to culinary school but that’s on the back burner for now. 

Anyways (please pardon my rambling)…I apologize for not posting. I’m trying to post more frequently or at least post something of interest for my new readers. I’m hoping you fab readers will send in some requests so I can post recipes, articles, advice, wisdom, randomness for you! 

I’ll be posting a few things within the next few moments. Look out for those my dear readers!

Yes, I’m a vegetarian.

  • No, I don’t eat just salad
  • No, I don’t eat chicken
  • Yes, chicken stock still counts
  • No, I’m not a vegan. I still eat cheese.
  • No, I’m not going to convince you to become a vegetarian
  • No, I’m not going to cry if you eat a steak in front of me
  • No, I don’t want to convince you to eat my food 
  • No, it’s not your job to police what I eat
  • Yes, I get enough protein
  • No, I’m not starving. I eat food. Nutritious food. I’m living a healthy lifestyle

Spinach (gluten & wheat free) pasta with baby broccoli and tomatoes sauteed in garlic, olive oil and lemon zest. Seasoned with salt and freshly cracked black pepper (trust me, this makes a difference. The flavor is unbeatable). 

This was light, refreshing and is easy to make on a ridiculously hot summer day. 

[And in case you’re wondering…I didn’t eat much of this while I was sick. I made this but just barely nibbled on it.]

Detox

I’m a firm believer that when you think of something or concentrate your energy on that thing you call it into action. For the past few weeks I’ve contemplated a cleanse. I wanted to try a juice cleanse, a detox, or whatever. I wanted to try something to flush out my system so I could feel healthier on a different level. The moment I really started to plan this out my body decided it was going to detox on it’s own. In other words, I got sick. I keep my immune system at it’s best for the most part since I eat right, exercise often, get my vitamins and wash my hands ALL the time. 

At first I was a bit upset at my body because I had a ton of things I imagined myself doing this past week. Then I realized, “Oh, I needed this.” Though it may seem weird that I was actually okay being sick, it allowed me to just rest and flush out the things I needed to flush out. I didn’t have to go on a liquid “cleanse” because I wanted to, it’s because my body needed to. I was on fruit smoothies, juices and soups all week. In addition to the 10 pounds I lost over the last few months, I lost about 5 pounds in one week. I’m not condoning a liquid diet for any reason whatsoever. I just think that if your body needs to rest, detox or cleanse you should allow yourself the time to do so. 

As I am slowly re-introducing solid foods back into my life, I find myself even more conscious of the things I’m putting into my body. I admit I don’t deny myself a craving if I have it and I’m not a calorie counter but I am more aware of what works with my body. The more you become in tune with what makes you feel good, the sooner you will achieve a healthier lifestyle. 

Listen to your body, it knows what you need.

Vegetable fried (but I didn’t really fry this) rice with tons of veggies! Zucchini, broccoli, snap peas, baby bok choy (I like this more than regular bok choy), tomatoes, yellow and green bell peppers, garlic and onions. I used brown rice and prebaked tofu which I bought at Trader Joes. For those who need a quick meal and crave brown rice, Trader Joes has a frozen version which is organic and can be steamed within the bag in the microwave. It’s delicious and cuts your cooking time in half. 

I pulled this recipe from my cookbook Vegan Yum Yum. I’m attempting to try as many of these recipes as possible to expand my palate and try something new!
