Vegetable fried (but I didn’t really fry this) rice with tons of veggies! Zucchini, broccoli, snap peas, baby bok choy (I like this more than regular bok choy), tomatoes, yellow and green bell peppers, garlic and onions. I used brown rice and prebaked tofu which I bought at Trader Joes. For those who need a quick meal and crave brown rice, Trader Joes has a frozen version which is organic and can be steamed within the bag in the microwave. It’s delicious and cuts your cooking time in half.
