February 25,2010: Broke? Hungry? Vegetarian?

Hello World!

Today was my first time ever making homemade pizza. Well, as Sandra Lee would say “semi homemade.” I was surprised at how good it tasted. It was not too heavy and melted in my mouth with the cheese complimenting the perfect crust. Yum! My tummy could not have been more happy. The best part about this meal was not spending any money ordering takeout and it was super fast. The one thing that bothers me about cooking is waiting and waiting for it to be ready and by the time it is done cooking you are too tired to eat. This time I was still semi-conscious to eat it! Here is my recipe:

Gigi Pizza (some of these ingredients can be used again for more pizza but you can add or take away whatever you like based on your tastes)

1 pound of pre-made pizza dough

1 carton of pizza sauce

1 packet of pre-shredded mozzarella cheese

2 cloves of garlic, minced finely

1 tsp of extra virgin olive oil

1 vine ripe tomato, sliced thinly

1 pinch of dried rosemary

1 pinch of salt

1 pinch of pepper

1. Pre-heat oven to 375 degrees.

2. Grab as much pizza dough as you would like. I grabbed a small amount and let it sit at room temperature. Once at room temperature, dust a cutting board with a little flour and roll the dough from the middle outward until you reach the desired thickness. Pat the dough into the baking pan/baking sheet. Push your fingertips into the dough to create tiny little pockets so that the flavors can absorb into the crust.

3. Rub olive oil onto the dough gently. Take the minced garlic and massage it slightly into the crust so that it almost becomes embedded into the dough. Sprinkle rosemary, salt and pepper on top. Put in the oven for 5 to 10 minutes so the flavors are incorporated.

4. Remove from oven and add as much tomato sauce as desired. Sprinkle a good amount of cheese. Take tomatoes and place all around the pizza. Cover with more cheese. Put in the oven for an additional 10 minutes or until the cheese is melted to your liking.

5. Kick back relax and eat.

Voila!

I hope you try this recipe the next time you are on a budget or snowed in (I am currently stuck in my apartment) or just hungry for a quick snack.

February 18,2010: Fast Pasta…College Student Style

I am abnormally exhausted and  I know the world probably is too but I had to write down my recipe for what I had for dinner tonight.

Being the pasta fanatic that I am, I decided to try a different type, Agnolotti. The first thing that stood out to me was the weird name, not that any other pasta has a normal name anyway. I tried the Quattro Formaggi (four cheese) Agnolotti.  Agnolotti looks like it is a wannabe Ravioli but it tasted completed differently. It melted in my mouth like butter. It was perfect. I was sad when I was done eating it.

Well here is what I whipped together in a matter of 15 minutes!

Compliments of Buitoni

Ingredients:

1 box of refrigerated Buitoni brand Quattro Formaggi (they have other flavors like wild mushroom)

1 1/2 cup of marinara sauce

Compliments of the Light Life

2 one inch disks of Vegetarian Gimme Lean Sausage(Light Life brand tastes the best)

Pinch of Salt

Pinch of Pepper

Pinch of Garlic Powder

1 tablespoon of Extra Virgin Olive Oil

How to do it:

1. Boil 4 cups of water in a decent sized pot. Once water is boiling, place Agnolotti in boiling water. Cook for 4-5 minutes. Since the Agnolotti is pre-cooked it only takes a few minutes. Be careful not to let it over cook. Once cooked strain and set aside.

2. In a saucepan heat the tablespoon of olive oil under medium-low heat. As the oil heats chop the disks of veggie ground sausage into little bite size pieces. Season with salt, pepper and garlic powder. Add to olive oil and sautee until brown. Once browned add in marinara sauce and cook until sauce is warm.

3. After the sauce is warm, pour over Agnolotti and enjoy.

Being a college student and trying to find time to eat is no easy task. I hope this helps!

February 10,2010: Latest Good Eats

Hello everyone!

I apologize for my disappearance.  I had a lot to handle at school these past two weeks.  I apologize for my lack of posts.  Fear not! I am here to offer more guidance on Veggie eating!

Lately I have been on the go and getting a meal in has been really difficult.  It is really important especially for vegetarians to get proper nutrition especially protein.

Breakfast, my favorite meal of the day, is the hardest meal to not rush through. I am usually in a rush and I have little time to put together something decent for breakfast.  Lately I have eaten Life Cereal with berries (raspberries, strawberries, blueberries or blackberries) with a drizzle of honey and soy milk. For my protein I heat up some Morningstar Vegetarian Sausages and I am good to go.  I am usually full for most of the morning and then try to snack on an orange or some type of fruit with Wheat Thins on the side.

I do admit that I love junk food.  It is hard not to especially when there is so much of it around on a college campus.  Today I was a little bad and ordered some chinese food. I ordered from Number One Kitchen, a cheap and quick Chinos joint. My regular dish, tofu and broccoli with garlic was the dish of choice today.  I asked them to spice it up but unfortunately they took it as make it more greasy.  I wanted to barf at the amount of oil and sauce they put in my dish.  I had to strain most of it out and by the time I finished I barely wanted to touch it.  Maybe next time I can ask for less sauce.

This weekend is Valentines Day and I am looking forward to eating and making good food for my boyfriend and I.

I feel inclined to bake, let us see what I concoct in the next few days.

January 31,2010: Easy peasy Nachos on a school night

My roommate and I are watching the Grammy’s and were in need of dinner but wanted to make minimal effort.  I concocted the easiest and fastest nachos so we could get to the eating faster as well as watching the Grammy’s.

Guramrit’s Easy Peasy Vegetarian Nachos

1/2 bag of Tostito Chips

1 cup of shredded cheddar cheese

1/2 cup of halved baby tomatoes

1 can of black beans

1/2 cup of frozen corn

1/2 onion diced

2 tablespoons of taco seasoning

1. Preheat oven to 350 degrees.

2. Put a layer of chips on the bottom of the pan (save some to put on top).  Rinse beans and add 1 tablespoon of taco seasoning. Set aside.

3. Take frozen corn and halved tomatoes and mix with the remaining tablespoon of taco seasoning.

4. Add beans, corn, diced onions and tomatoes to the top of the chips.  Add shredded cheese.  Add rest of chips and add more cheese.

5. Bake in oven for 15 minutes.

6. Serve with Salsa and enjoy! Yumo!

January 26, 2010: Lunch Time Yum Yum’s

Yes I just made up my own word but that is how I felt today when I grab a wrap for lunch.  I am not a big fan of eating sandwiches besides a bagel with cream cheese. In general I do not eat a great deal of bread.

Today I enjoyed a simple wrap.  Usually when I order sandwiches at home in the Bronx I am questioned heavily about my choice to not include meat on my sandwich.  Apparently a sandwich is not a sandwich without the deli sliced meat.  WRONG! All you need are a few ingredients and you are set.

One of my favorite ingredients on a sandwich is pesto sauce.  For my sandwich today I chose a pesto-garlic wrap with pesto sauce, provolone cheese, tomatoes and lettuce.  For some reason I cannot picture this sandwich as complete without having it grilled.  The cheese melts and the pesto sauce heats up the wrap and oozes into your mouth with every bite you take.  My mouth is watering as I am writing this.

It is a sensational combination for a wrap/sandwich.  The best part is that the wrap is light and not as heavy as regular bread.

It was filling but I was not overly stuffed.  Wraps at SU come with pickles and chips.  For today I decided against chips and went straight for the pickle. YUM YUM YUM. My stomach is still happy.

If you’re ever looking for more veggie friendly sandwiches try adding more veggies to the sandwich and replacing the meat.  Think cheese, lettuce and tomato!
