July 23, 2010: Cobb Salad Thursday

My parents returned from their vacay in Canada yesterday and my mother calls me declaring her craving for a salad.  Our favorite restaurant is across the street from our apartment.  We have been going to VIP’s since it opened in 1996/1997.

One salad we order often is a vegetarian version of a cobb salad.  Cobb salad tends to come with chicken and bacon but we just ask them to take it out.  The salad composes of mixed greens: romaine lettuce and baby arugula, tomatoes, shredded carrots, shredded red cabbage, avocado, cucumbers and swiss cheese.  My mom and I usually get ranch dressing but decided to make our tahini-yogurt dressing instead.

Talk about satisfying your appetite on a hot day.

What made this day even better was the Zumba class we attended later on that evening.  If you have not tried Zumba I strongly suggest you do.

It is amazing!

July 20,2010: Croissants & Coffee

This may sound French of me but I love the combination of Croissants and Cafe Au Lait or even a Latte/Cappuccino.

I am on a pretty tight schedule for work ever since my hours were changed.  I am on such a grab and go diet that I eat whatever is around the house or cheap and easy.

For a cheap and easy breakfast I had a croissant and an iced caramel macchiato.  YUM!

On other days I have an Organic Low Fat Yogurt or a bowl of cereal.

I wonder what I will have time to eat tomorrow morning.

Got to grab some shuteye readers, work in the a.m.

July 19,2010: Meal of the Day

Today was one of those nights where I just ate something quick and easy: spinach and cheese tortellini with marinara sauce and vegetarian sausage.

For dessert I had cut up strawberries and blueberries.  It was refreshing but delicious non the less.

Sorry for the short post today.

I got to get into some more interesting eats!

July 18,2010: I LOVE Paninis

Happy Birthday to my Daddy!  Today we decided to go out to dinner and a movie.  Dinner was a bit early but it was incredibly filling; so filling that we did not even order the usual snacks at the theaters (what a relief! Those snacks are fatty, full of calories and expensive).

My parents decided a diner near the theater would be our best bet.  We stopped at Raceway Diner, across the street from Yonkers Raceway and practically around the corner from Cross County’s Multiplex.

Mom and Dad went straight for the veggie burgers.  I am not too fond of veggie burgers unless they are prepared a certain way and diners just don’t seem to cut it for me.  I decided to go for an Italian Panini, tomatoes, pesto and mozzarella squished together in between two pieces of Ciabatta bread (or so it seemed and tasted).  I was a little disappointed that the cheese was not melted perfectly but the bread was hot and the combo of pesto, tomatoes and cheese just sent my taste buds to heaven.

What also added perfection to this sandwich?  The crisp, perfectly salted french fries and a pickle on the side.  I already miss my sandwich.  I want another one.

July 18, 2010: Friday Night Dinner

On Friday I had a weird craving for tons of vegetables.  I think it has to do with my poor eating habits at work.  When I am super busy I neglect my normal healthy eating habits and opt for easy, cheap and unhealthy foods like Cheese Nips.

For dinner I had a baked potato topped with broccoli and cheddar cheese.  I know I said I was going to try to go without cheese but it is so hard especially when eating potatoes!  On the side I ate corn on the cob.  I don’t like biting into whole cobs of corn so I cut the corn off of the cob and seasoned it with a little dash of Sazon.

It was incredibly filling and delicious.

YUM!

P.s. A little secret when it comes to baked potatoes and being in a rush: go to Wendy’s and order it from there.  It is about $1 and you save all the prep time and wait time and get straight to the eating!
