On Friday I had a weird craving for tons of vegetables. I think it has to do with my poor eating habits at work. When I am super busy I neglect my normal healthy eating habits and opt for easy, cheap and unhealthy foods like Cheese Nips.
For dinner I had a baked potato topped with broccoli and cheddar cheese. I know I said I was going to try to go without cheese but it is so hard especially when eating potatoes! On the side I ate corn on the cob. I don’t like biting into whole cobs of corn so I cut the corn off of the cob and seasoned it with a little dash of Sazon.
It was incredibly filling and delicious.
P.s. A little secret when it comes to baked potatoes and being in a rush: go to Wendy’s and order it from there. It is about $1 and you save all the prep time and wait time and get straight to the eating!
