July 18,2010: I LOVE Paninis

Happy Birthday to my Daddy!  Today we decided to go out to dinner and a movie.  Dinner was a bit early but it was incredibly filling; so filling that we did not even order the usual snacks at the theaters (what a relief! Those snacks are fatty, full of calories and expensive).

My parents decided a diner near the theater would be our best bet.  We stopped at Raceway Diner, across the street from Yonkers Raceway and practically around the corner from Cross County’s Multiplex.

Mom and Dad went straight for the veggie burgers.  I am not too fond of veggie burgers unless they are prepared a certain way and diners just don’t seem to cut it for me.  I decided to go for an Italian Panini, tomatoes, pesto and mozzarella squished together in between two pieces of Ciabatta bread (or so it seemed and tasted).  I was a little disappointed that the cheese was not melted perfectly but the bread was hot and the combo of pesto, tomatoes and cheese just sent my taste buds to heaven.

What also added perfection to this sandwich?  The crisp, perfectly salted french fries and a pickle on the side.  I already miss my sandwich.  I want another one.
