September 9, 2010: My Take on a Mexican Casserole

Hello world! I am finally able to access the internet at a decent speed.  I was so excited that I got my digital cable installed and my internet that I decided to cook a quick but delicious meal.  I have been super busy lately so it is really hard to find time to cook anything.

For breakfast I stick to my bowl of cereal with soy milk/almond milk and some veggie bacon.  Today for lunch I went for some stir fry which I picked up at Food.com in Newhouse.  My stir fry consisted of tofu, broccoli, mushrooms, snow peas and baby corn in teriyaki sauce with some lo mein noodles.  It was delicious minus the fact that the tofu was undercooked.  Just an FYI to people cooking tofu, don’t steam it with the vegetables.  It actually comes out really gooey and gross.  I prefer my tofu to have a crisp outside with a firm inside.

Tonight I made some guacamole as I usually do but now I served it with my easy casserole.  I took a can of black beans, a cup of frozen corn, a diced jalapeno (seeded if you like), 1/4 cup of diced tomatoes, 1/4 cup chopped onion and 2 cloves of garlic smashed and tossed it together with a packet of Sazon.  I took this mixture and put it on top of tortilla chips, added cheddar cheese then more tortilla chips, mixture and topped with more cheese.  I baked this for about 20 minutes in a 350 degree oven.

At the end of the school week, trust me, this meal is comforting especially with a nice Corona (or whatever beer/beverage of choice).

It is just smooth sailing for the rest of the weekend for me readers!

September 8, 2010: Delightful Veggie Pasta

Today I decided to make spinach & cheese tortellini with sautéed zucchini and yellow squash in garlic along with Boca Crumbles.  I sautéed the zucchini and yellow squash together then added the crumbles to it and once everything was cooked I added marinara sauce.  I then tossed the sauce with the tortellini and voila, instant delicious dinner.

September 4, 2010: Varsity has more than just pizza…

Today I had an early dinner/late lunch date with my big, Dave (for those of you in Greek life who get bigs and have littles, this may make sense to you; this is in no way a reference to Sex in the City).

We decided to go to Varsity since it is cheaper and the quality of the food is actually pretty good.  I ate pizza probably a good two times this week. I got a slice from Varsity earlier on in the week and got a slice from Acropolis yesterday.  Honestly, Varsity pizza tastes way better.  It is rare that I will get two slices of pizza anywhere and Varsity is one of those places.  Acropolis, however, dominates on the cheese fries game.  The fries are crispy, not oily and have the perfect melted cheese accompaniment.

Today I decided to lay off the pizza and go for a classic: Grilled Cheese with Tomato and a bag of Kettle Baked Chips with Sea Salt.  It was a decent sized portion and was actually delicious.  I don’t like a sandwich to be greasy or served with all kinds of weird nastiness (coleslaw and greasy overly salted chips).  The only thing missing was a pickle which they ran out of and made me sad.

If you are on a diet and are looking for something healthy go for Varsity.  It is easy on your pocket and your waistline.  I am in pretty good shape but I do like to indulge in fries every once in a while.

August 31, 2010: Back to School: The Problem with School Food

Hello everyone!

I apologize for my lack of posting.  I just got back to school and my first day of senior year began yesterday.  I have been adjusting to the school life once again and organizing my life.  One of the main things I have been concerned about is food.

Over the summer I purchased two cookbooks: one vegetarian and the other a mixture of different types of food for those moments I don’t mind cooking chicken for my boyfriend or my roommate.

I also purchased a spice rack.  Yea, I know, I am a dork.  I nearly jumped for joy at Costco when I found it.  I just HAD to have it.  It was the perfect gift for myself but my grandpa decided he wanted to buy it for me.

I am not sure if you recall one of my posts about the amazing wraps in Food.com in Newhouse.  I raved about the amazing wraps that are made in this little cafe designed for us journalists to grab a bite to eat on the go.  I was dying to have one of these wraps yesterday so I ordered one.  The wrap was AMAZING while I was eating it.  However, the moment I stopped eating my stomach began to hurt.  I then remembered a friend who told me the school puts “stuff” (I am assuming this is code name for laxatives or a digestion stimulant) in the food.  My stomach was in agony for the rest of the day and all I wanted to do was go back and eat it and ignore the annoying stomach pain.

I think since I was so used to cooking my own food all summer, my stomach adjusted to my own delectable creations.  I think I will stick to home cooking for a little while.

August 25, 2010: Spaghetti with Fresh Tomatoes

Tonight my mom and I decided to make a pasta dish we found in the newspaper.  It was incredibly easy, light and refreshing.

For those of you interested in making this dish, here is the recipe:

What you need:

4 Vine Ripe Tomatoes

1/2 cup Extra Virgin Olive Oil

2 Tablespoons Red Chili Flakes

2 Tablespoons chopped basil

3 cloves of garlic, crushed

1 Box of Spaghetti

Salt & Pepper, to taste

Grated Parmesan Cheese

How you make it:

1. Turn the oven on to broil. Rub olive oil on the tomatoes and season with salt and pepper.  Roast tomatoes until skin begins to blister (about 15 to 20 minutes).

2. While tomatoes are roasting, cook pasta in salted boiling water.

3. Once tomatoes are done, peel skin off and chop the flesh.  Put into a bowl.  Add oil, chili flakes, garlic, basil, salt and pepper. Allow flavors to infuse.

4. Once pasta is cooked, drain and add tomato sauce.  Serve immediately with grated Parmesan cheese.

[Serve with sautéed Broccoli and Green beans!]
