August 25, 2010: Spaghetti with Fresh Tomatoes

Tonight my mom and I decided to make a pasta dish we found in the newspaper.  It was incredibly easy, light and refreshing.

For those of you interested in making this dish, here is the recipe:

What you need:

4 Vine Ripe Tomatoes

1/2 cup Extra Virgin Olive Oil

2 Tablespoons Red Chili Flakes

2 Tablespoons chopped basil

3 cloves of garlic, crushed

1 Box of Spaghetti

Salt & Pepper, to taste

Grated Parmesan Cheese

How you make it:

1. Turn the oven on to broil. Rub olive oil on the tomatoes and season with salt and pepper.  Roast tomatoes until skin begins to blister (about 15 to 20 minutes).

2. While tomatoes are roasting, cook pasta in salted boiling water.

3. Once tomatoes are done, peel skin off and chop the flesh.  Put into a bowl.  Add oil, chili flakes, garlic, basil, salt and pepper. Allow flavors to infuse.

4. Once pasta is cooked, drain and add tomato sauce.  Serve immediately with grated Parmesan cheese.

[Serve with sautéed Broccoli and Green beans!]
