August 25, 2010: Breakfast at IHOP: Belgian Waffle

I love, love, LOVE Waffles! I think I am just a big fan of breakfast foods.  I love breakfast at any time of day.

Today was a major shopping day so I needed some good grub to sustain me through hours of shopping and searching for things for back to school.

I got an Iced Mocha Coffee with a Belgian waffle topped with a strawberry compote and whipped cream.  It was phenomenal.  I like that I can eat just one waffle and feel satisfied.  The best part? This meal was vegetarian! If you want a vegan option tell them to remove the whipped cream!

August 24, 2010: Fantastic Deal at Cosi

For $7.79 you can try half a sandwich, half a salad or soup at Cosi.  You can select any combination for that low price.  Not only does this help you eat in moderation, it keeps you within a budget and allows you to try more than one thing.

Yesterday I tried a T.B.M Melt (Tomato, Basil and Mozzarella cheese with sun-dried tomato pesto on white flatbread) with a Cesar Salad.  I actually wanted tomato basil soup but I had to opt for something different.  It was completely satisfying.  I must admit I was a little hesitant to try the sun-dried tomato pesto because to me pesto is green, but it was the perfect complement to this half of a sandwich.

August 22, 2010: Wonderful Food on a Rainy Day

Hello World! I apologize for being M.I.A. this weekend.  I was extremely busy. I attended a wedding, went to the beach and spent half the day cooking today.

I ate a lot of fruit this weekend: raspberries, strawberries and white nectarines.  My body seemed to crave fruit and I feel better from eating it.

Today my mom and I decided it was soup day.  We decided to create a corn and potato chowder.  This chowder is something that I have perfected over the years and it always tastes even more delicious each time (especially the day after you make it, the flavors are able to absorb even more and gives it a perfect taste).  It is enjoyably spicy with the right amount heat to it that hits your taste buds after the creaminess of the corn and potato.

For those of you interested in creating this creamy, delectable chowder here is my recreated recipe:

What you need:

1 red onion, chopped

3 cloves of garlic, chopped

2 1/2 tablespoons of butter

2 1/2 tablespoons of whole wheat flour

2 1/2 cups of water

3 red/white potatoes, peeled and diced

1 1/2 package of frozen whole kernel corn

2 cups of vegetable stock

2 cups of heavy cream/half & half/milk (I prefer the half & half or heavy cream, it gives it a unique and delicious flavor)

1 4-ounce can diced green chile peppers

Salt & Pepper to taste

How you make it:

1. In a large saucepan/pot cook onion in hot butter until translucent/tender.  Add garlic, salt and pepper.

2. Stir in flour until the entire mixture is thick.  Add the vegetable stock slowly.  Add corn, potatoes and water.

3.  Add diced green chile, salt and pepper.  Bring to a boil; reduce heat and cover.

4.  Cook until potatoes are tender (10 to 15 minutes).

5.  Stir in the heavy cream and serve immediately.

This soup tastes even better the next day.  You can even make some corn bread (which is what we did).  Just follow the directions on the box.  Sometimes you can save time and money by just getting a corn bread mix.

August 17, 2010: California Pizza Kitchen

Today was a relatively long day.  My mom dropped me off at my grandparents’ hotel to swim in the pool at the wee hours of the morning.  After my mom picked us all up we went to shop a little. Of course, shopping works up an appetite.  On the way to Trader Joes we decided to stop at California Pizza Kitchen in Scarsdale.

On a hot summer day my mom, grandmother and I were crazy enough to have soup.  My grandfather, on the other hand, was in the mood for Fish tacos.  My mom and grandmother got a bowl of Tuscan White Bean Minestrone Soup (Cannelini Beans, zucchini, onions, celery, tomatoes and parmesan cheese all combined into a soup for a decent price of $5.99). I was in the mood for something a little different.  I went for the Sedona Tortilla Soup, a lovely combination of tomatoes, tomatillos and corn along with green chilies and what the restaurant calls “Southwestern spices.”  The soup was garnished with thin crispy tortilla strips.

The soup was delectable and coated my taste buds with the most exotic flavors.  I was in soup heaven.  It was creamy, elegant and had the right amount of spice.

My mom and I also ordered an appetizer of Tuscan Hummus (we are hummus women).  Rather than chickpeas this hummus is made with pureed Tuscan white beans, sesame, garlic, lemon and garnished with parsley, tomatoes, basil and garlic.  This delicious, melt in your mouth hummus was served with a honey-wheat whole grain pita bread.  It was to die for.  It was one of those dishes you can enjoy with your eyes closed.  I know I did.
