Poppin’ Peanut Noodles

Tempeh Bacon Lettuce & Tomato Sammies (1)

There’s nothing better than a quick and easy dinner on a weeknight. Yesterday was not the busiest of days (which I am truly grateful for) but Matthew and I got quite a bit done around the house. I am so grateful I am marrying a man who doesn’ t mind sweeping and mopping. We’ve done some serious sweating the last few days. We did one round of Insanity by Shaun T (which is 2 months) and now we are starting all over again. And we are going harder this time around. This equals buckets of sweat. So I am really grateful for a clean floor.

After a 40-minute sweat fest, I didn’t want to spend so much time in the kitchen. I really wanted something easy, nourishing and freakin’ delicious. I love throwing a bunch of things together (basically cleaning house in the fridge- this keeps things from going bad) and what better way to do that than stir-frying some veg and tossing some brown rice noodles with peanut sauce. Amazeballs!

Snow Day Sea Salt Chocolate Chip Cookies

Tempeh Bacon Lettuce & Tomato Sammies (7)

Howdie lovers!

NYC got SLAMMED with snow. Winter was tired of our trash talk and decided to show up, give us some snow (okay, lots of snow about 25 plus inches) then bounce, leaving the city in disarray.

So what do you do with a snow day or two (after you play outside because the roads are closed of course)?

YOU BAKE!

And binge watch Avatar the Last Airbender. Yea, super cheesy but Matt and I love this show. It’s perfect and really helps you tune into that inner child 😉 Oh yes.

Braving the storm to go and play…and dig out the cars!

Beware of the power of these cookies. You will not be able to slow down because they are just so so so delicious. So be sure to hide them in the kitchen, out of reach just so you can savor them a little longer.

Spicy Corn Chowda’

Tempeh Bacon Lettuce & Tomato Sammies (6)

I know, I know. I did a vegan version of this soup nearly 2 years ago today. But this soup is just SO DAMN good and I needed to really make this a creamy chowda. And lately many of my soups have involved a LOT of coconut milk and I think I need to play around with some different creamy additions. This recipe combines cauliflower with a bit of heavy cream to balance out the heaviness of the cream and give it a little veggie boost.

But in all honesty if you’re not diggin’ the heavy cream, you can combine coconut cream and cauliflower or make it SUPER vegan and soak some raw cashews in warm water for about 4 hours, blend on high and add the cauliflower for a really nourishing creamy aspect.

If you want the full vegan version of this recipe, check out this recipe here.

Warming Red Coconut Curry

Tempeh Bacon Lettuce & Tomato Sammies (5)

Happy New Year! We’re just 5 days into the new year and  I’m feeling like poo. And right now, I am trying to get myself back to optimal health. The holiday’s really took a toll on my body and really has me focusing on self-love and self-care. I don’t think I’ve forced myself to rest as much as I have for the last few days. And to be honest, it feels hellagood.

I’m always running around with an endless to-do list, forcing myself to be busy and saying yes way too much. One of my intentions (not resolutions- this makes me think there is a possibility for failure) for this year has to be saying no more (without guilt) and saying yes to rest and doing absolutely nothing (more often than before).

One of my favorite things to do while resting and getting much-needed recovery time is whipping up nourishing and warming meals that require little to no effort. And that’s exactly the deal with this curry. It’s customizable and versatile making virtually any veggie you have on hand absolutely mouthwatering and delicious. I mean, come on. Curry + coconut milk is a match made in culinary heaven. The only real thing you’ll have to go out to get would be the curry paste (and it lasts for a decent amount of time in the fridge for future curry creations). Amazeballs, right?

The Best Vegan Coquito

Tempeh Bacon Lettuce & Tomato Sammies (1)

Guys and gals, Christmas is upon us (like 2 days away OMG). And do you know what that means?! Egg nog! Okay maybe not exactly. Not in my fiance’s family. His Puerto Rican side of the family is lively, loving and HUGE and one of my favorite things I look forward to each year has to be the coquito. And last year we had a coquito tasting contest (best believe I was judging and enjoying every bit of it-vegan or not).

What in the heck is that?!

It’s a eggnog-like drink made with rum, coconut milk, sweet condensed milk, egg yolks, vanilla, cinnamon, nutmeg, and cloves.
