There’s nothing I enjoy more than summer fruit…
Seriously just wait until watermelon is officially back in season (I’m already partaking…but you know when it’s at it’s best, it’s well…it’s best. DUH).
Right now I’m enjoying the short strawberry season here in NYC. And once you try a fresh seasonal local strawberry, there ain’t nothing else like it. It is THAT good.
And if you know anything about fresh strawberries, they do not last very long (besides the instant snacking), they are super delicate. So I when I brought home two pints of these sexy thangs and had a few stalks of rhubarb, I thought why the heck not.
Though I did think a pie would suffice, I opted for something lighter and a little less labor intensive. I mean, who wants to spend the summer using the oven?! NOT ME!
This crisp is:
- tangy
- crunchy
- flakey
- sweet without added sugar or sweeteners
- just a few ingredients with little to no effort
Now that is amazeballs!
Strawberry Rhubarb Crisp {SF, GF, V}
Serves 2
Total time: 30-40 minutes
What You Need:
- 2 stalks of rhubarb, chopped
- 1 pint of strawberries, hulled and roughly chopped
- 2-4 tablespoons coconut oil
- 1 lemon, zested and juiced
- 1/2 cup almonds, ground coarsely
- 1/4 cup coconut chips
- 1 teaspoon vanilla extract
- Optional: 1-2 tablespoons of coconut nectar/sugar crystals
How You Make It:
- Preheat your oven to 375 degrees F.
- Time to prep your rhubarb. In a skillet, warm 2 tablespoons of coconut oil. Add in chopped rhubarb and saute for about 5-10 minutes or until softened.
- Add in half of your strawberries and cook until soft.
- Stir in lemon juice, zest and vanilla extract. Set aside while you prepare your crumble.
- In a small bowl, combine ground almonds, coconut chip and coconut oil. Set aside to wait for your prepared ramekins.
- Divide your rhubarb strawberry mixture into your ramekins. Scoop crumble on top.
- Bake for 30 minutes or until golden.
- Serve with coconut milk ice cream or freshly whipped coconut cream for something snazzy and sexy.
