Creamy Broccoli + Cauliflower Soup

Tempeh Bacon Lettuce & Tomato Sammies

Okay, okay I realize I have done a broccoli cheeze soup recipe on No Beef Here like 2 and a half years ago when I was doing the whole super duper vegan thing. In all honesty, I always think about how I can take recipes I’ve already made and make them WAY better and less complicated. Can you imagine a vegan recipe or even vegetarian recipe that doesn’t call for a sh*t ton of ingredients?! Jeez.

Simplicity is key.

I’ve made this broccoli + cauliflower soup at least two or three times in the last few weeks. From working outside in the frigid cold (in all honesty I’ve grown to appreciate my farmers, postal workers, sanitation workers, etc way more as a result) to my weird sleeping habits (Matt is on a different schedule, 4-12 a.m. yikes), my desires for soup has grown immensely. This recipe is a no nonsense, creamy, dunk garlic bread in it type recipe. Wait…there’s veggies up in here too. This makes it EVEN better 😉

I Can’t Believe It’s Not Potatoes

Holy cow…last week was such doozy. I don’t remember the last time I was horribly sick like I was last week. Fever, cough, mucus, all that soreness and muscle aches. The whole shebang. I had it. It sucked. I was out of commission and felt completely tortured. I have a confession to make. I don’t know what it means to take a break. I LOVE to work. Well, I love to cook, coach and share my wisdom and it’s not really work when you love it, right? But I am such a go, go, go person. Gotta do this, gotta do that. And my body said, “hey girl it’s time for a vacay.” Also known as “be on bed rest and do absolutely nothing and catch up with the Kardashians on the couch.”

Simple Sexy Stromboli

Last year at a company Christmas party potluck my beloved intern Jillian brought in this ooey gooey cheese fest hidden in layers of crunchy, doughy heaven. It was reminiscent of pizza but made me feel like I was indulging in a calzone (but not the ones from the pizza shop, I’m talking about the HUGE ones from college that were bigger than the size of my face) minus the ricotta.

There is something comforting about cheese. For the past 2 years I was completely convinced that being fully vegan (and probably being a stank b*tch about it) was the right way to go. But after some serious soul-searching and letting go of self judgment, I decided cheese is actually okay. I fully believe in the power of treats. By allowing ourselves a judgment free treat (I said “a treat” not multiple treats or a smorgasboard of treats) we are really allowing our souls to feel completely nourished. Why, you may ask? Well, simple. Our souls don’t like to be restricted. Unless you want to feel like a crazed, self judging, self loathing person, allowing yourself that small piece of chocolate, a macaron, a mani-pedi, or something that makes you feel uplifted and joyful is such a wonderful thing.

Okay seriously t’is the season for some grounding, hearty goodness. With all the holiday craziness going on it’s really important to find some footing and keep ourselves stress free. What good are we when we are stressed anyway? I know I’m not my best self when under stress which is why I am making it my mission to breathe and meditate for at least 5 minutes every day.

Comfort Yo Self with Risotto

I’m in the process of packing up my entire childhood, my whole life and moving. It’s such a process because you go through a few things, reminisce on a few photos, read old love notes, and laugh at the things you thought you needed but really don’t. Isn’t it amazing how that works? You hold onto things you think you would need but you really don’t need them at all. How profound is that? As I pack and sort through the last 25 years of my life, I realize how important it is to simplify. To live simply is to live abundantly. Hashtag, just saying (#justsaying).
