I worked a long day at the farmers market on Sunday and it was FREEZING. I was not prepared for the rapid change in weather. Even with those handy dandy hand and feet warmers, I could not feel my toes or fingers. The end of the work day called for a hot bowl of soup. But not just any soup. Something creamy, comforting and heart warming.

This is the absolute EASIEST cream of mushroom soup that actually has no cream in it. It’s actually vegan.

In the last 2 weeks, I have really gained a stronger awareness of my body. I have decided that there are so many opportunities to pivot, shift, make changes that ultimately make me feel like a better me. In my last post, I decided to tell the scale to eff off and that it wasn’t going to determine how I was going to live my life. But I did catch myself making excuses, trying to eat less and really jumping into the judgmental mindset. WHOA girl. Not cool. I nipped that crap right in the bud and said no thanks, I’m good.

Even when we say to ourselves out loud or silently, that we love our bodies and that we feel healthy, light, blissful and free in our own skin, sometimes at the deepest, darkest level we don’t believe it. We start to self-sabotage. And this is when real change starts to happen; right before we begin our self-sabotage. Ain’t that some shit? Come on!

Over the last few weeks or so I have found myself really drawn to self-care and self-love. I wake up slowly, move slowly, don’t force myself to adhere too strict of deadlines to keep me less anxious. I’m also treating myself to really grounding, calming foods. Yeah, that is totally a treat to me. As weird as that may sound to some, taking the conscious effort and making the time to create something is absolutely an act of self-love and self-care.

Rockin’ Roasted Red Pepper Mac n Cheese

With all this cold weather lately, anything cheesy sounds more desirable and I’m kind of sick of soup (I’m lying). And it’s amazing that Matthew is such a fan of my mac n cheese especially after the holiday’s when I made him and his coworkers a batch with bacon in it. So on the random day of the week when I ask if he has any requests for the week (yea, we do that in our house) he blurts out: MAC N CHEESE! Now, don’t even get me started on the amazingness of mac and cheese. There is something not only comforting but just absolutely warming about slurping down this cheesy dish. And who I am to deny myself this delightful opportunity to explore a healthier way to satisfy my craving?!

Simple, Sexy, Summertime Farro

I’m in denial that summer is coming to a close. Seriously? Who decided it could end? Nooooo I’m not ready (yes, read that in a Kevin Hart voice, laugh, then keep reading).

Just because the seasons are changing doesn’t mean I have to let go of the awesomeness that the summer brings in terms of food. So I decided to come up with a simple, delicious and amazingly sexy farro dish to soothe my dissatisfaction. The best part about this dish is you can eat it ALL the time, regardless of the season. But I’m pretty sure you want to make the most out of your bounty of heirloom tomatoes right about now. So, let’s get cracking!

What You Need: 

  • 1 cup cooked farro (follow the package instructions, rinse and set aside)
  • 2 persian cucumbers, cubed
  • 1 cup of tomato, diced
  • 1/2 cup of radishes, diced
  • 1 can of organic garbanzo beans, rinsed
  • 1/4 cup mint, finely chopped
  • 1 lemon, juiced
  • 3 tablespoons extra virgin olive oil
  • Sea salt and black pepper to taste
  • Optional: Sheep’s Milk Feta Cheese, crumbled

How You Make It: 

  1. Combine all ingredients in a large serving bowl. Season as needed.
  2. Enjoy
