TBLTA [Tempeh Bacon Lettuce Tomato Avocado] Sammy

Tempeh Bacon Lettuce & Tomato Sammies

I’m feeling on top of the world. I feel like I’ve been on cloud 9 for at least 4 weeks now (well…I’m kinda always on cloud 9…so maybe cloud 12?) because of the flow of wonderful things happening in my life. I started a new adventure as a farmers market manager here in the city for a few days a week, giving me plenty of time to focus on my health coaching and events. I’m back to a packed schedule with some other side projects and now I have a wedding to plan (teehee…well it’s next year so no stress over here).

I already knew this but whenever there is a series of hurdles or even doubts or fears that show up, I can feel the greatness bubbling underneath the surface. It’s the lotus waiting to emerge through the muck and sh*t. So instead of rushing the process, I surrender and watch as beautiful opportunities lay themselves at my feet (like my new market manager gig).

Simple, Sexy, Summertime Farro

2014-09-06 17.00.46

I’m in denial that summer is coming to a close. Seriously? Who decided it could end? Nooooo I’m not ready (yes, read that in a Kevin Hart voice, laugh, then keep reading).

Just because the seasons are changing doesn’t mean I have to let go of the awesomeness that the summer brings in terms of food. So I decided to come up with a simple, delicious and amazingly sexy farro dish to soothe my dissatisfaction. The best part about this dish is you can eat it ALL the time, regardless of the season. But I’m pretty sure you want to make the most out of your bounty of heirloom tomatoes right about now. So, let’s get cracking!

What You Need:

  • 1 cup cooked farro (follow the package instructions, rinse and set aside)
  • 2 persian cucumbers, cubed
  • 1 cup of tomato, diced
  • 1/2 cup of radishes, diced
  • 1 can of organic garbanzo beans, rinsed
  • 1/4 cup mint, finely chopped
  • 1 lemon, juiced
  • 3 tablespoons extra virgin olive oil
  • Sea salt and black pepper to taste
  • Optional: Sheep’s Milk Feta Cheese, crumbled

How You Make It:

  1. Combine all ingredients in a large serving bowl. Season as needed.
  2. Enjoy

Yes, it really is all that simple.

Do you have any recipe ideas that use farro? I would love to know!

Peace, love, no beef!

Roasted Corn Salad

2014-03-30 16.31.16

Summer is upon us and I am SO excited!

Seriously…I am really ready for the sunshine, beach weather, warmth, bonding, vacations and everything that comes with the territory of the season.

One of my FAVORITE things about summer has to be the food.

There are so many goodies in season for summer. Peaches, cherries, corn, greens…I can go on and on and on and on.

Summer is really all about eating cooling foods and I have the recipe to keep you cool and satisfied.

So as soon as you hear your tummy grumbling after reading my recipe, head on over to your closest farmer’s market and grab some goodies!

What You Need:

2 ears of corn roasted until slightly browned over open flame or grill, kernels removed and set aside (or you can buy the frozen roasted corn from Trader Joe’s, just defrost the entire bag and use in this salad)

2 avocados, cubed

2 vine ripened tomatoes, diced

2 cloves of garlic, smashed and diced

1 shallot, diced

Juice of 1 lime

Handful of cilantro, roughly chopped

Pink Himalayan Sea Salt to taste

How You Make it:

  1. Combine all ingredients in a large bowl. Season with salt. Serve.

How easy is that? I think I might need a snack after talking about this…

Off to the fridge!

Peace, love and no beef!
