The weather is cooling down and you know what that means?! It’s time for soups, casseroles, hearty meals and time to buckle down and find our rooting. And might I add time for the awesome holiday’s. I’m already in the process of brainstorming ideas for recipes to wow my family especially with vegetables they haven’t tried before and in combinations that really represent the heart of the season.

Vegan Pumpkin Spice Latte {With Real Pumpkin}
It amazes me how fall has become a pumpkin crazed season. I mean I’ve seen pumpkin flavored everything…butter, biscuits, bread, cookies. You name it, it probably exists and it’s probably some fake crap that is loaded with additives and chemicals. My favorite pumpkin flavored goodie (aside from my granola) has to be the pumpkin spice latte. But of course, these big coffee peeps have taken it upon themselves to create fake pumpkin lattes with a ton of sugar that keep us addicted and going back for more.
Save your pennies friends and make this delicious concoction with ease knowing you are actually having a real pumpkin spice latte that’s almost too good to be good for you. But trust me, it is.
“No Way It’s that Easy” Cauliflower Crust Pizza
Where did summer go?! Hey, Mother Nature! What’s happening? It has been a long week of gloomy cold weather. I’m not digging it. I was so excited for the summer and the beach friendly weather…but no. We got thrown for a loop and now I don’t know what to do! But…thankfully it’s not that big of a deal. I still had my sweatshirts within reach and not in storage yet. I’m just glad it’s not snowing.
I know I had posted that even in the heat I use my oven, well…now us New Yorker’s can use our ovens without worry and without sweating out our blowouts. At least for a few more days…so you can make this recipe.
Last weekend I hosted a healthified and simplified Italian dinner workshop with roasted artichokes (with a lemon yogurt dipping sauce), peach and strawberry sangria AND this ridiculously easy cauliflower crust pizza with spinach pesto. My students were stunned at how easy it was to make this recipe and how few ingredients were required. This is not a recipe that will break that bank and that’s FAB! And as an added bonus, you won’t even notice the cauliflower. It’s a great way to get the kiddos to eat veggies without realizing it. And I dig that.
Freaking Amazing Peanut Butter Dark Chocolate Granola
OMG! It feels like summer. And I am THRILLED. Yup. I’m one of those weirdos who LOOOOOOOVES summer. The hotter the better. That just means I get to drink more water and be my camel like self, as Matt (my honey) calls me. Yea. I drink so much water (but no worries about depleting minerals…I’m good here ;)). Summer to me means more watermelon (if you follow my Instagram or FB, you will see I’m on a BIG watermelon kick), iced teas, COLD BREW COFFEE (can I get a HELL YEA) and more fruits and smoothies. Legit…summer is where it’s at!
Let’s Be Mermaids Seaweed Salad
In the last 2 weeks, I have really gained a stronger awareness of my body. I have decided that there are so many opportunities to pivot, shift, make changes that ultimately make me feel like a better me. In my last post, I decided to tell the scale to eff off and that it wasn’t going to determine how I was going to live my life. But I did catch myself making excuses, trying to eat less and really jumping into the judgmental mindset. WHOA girl. Not cool. I nipped that crap right in the bud and said no thanks, I’m good.
Even when we say to ourselves out loud or silently, that we love our bodies and that we feel healthy, light, blissful and free in our own skin, sometimes at the deepest, darkest level we don’t believe it. We start to self-sabotage. And this is when real change starts to happen; right before we begin our self-sabotage. Ain’t that some shit? Come on!
