Jeez Louise I’m EXHAUSTED. I want to blame something planetary or cosmic that is out of my control because I sure feel beat. This really comes with the territory of hosting events, workshops and wellness fairs. I’m having fun and I feel my purpose and passion shining through every single time I do them. I even got people to try kale for the first time yesterday at my cooking demo at the Union Square Farmer’s Market. So all in all, it’s truly worth it.

I Can’t Believe It’s Not Potatoes

Holy cow…last week was such doozy. I don’t remember the last time I was horribly sick like I was last week. Fever, cough, mucus, all that soreness and muscle aches. The whole shebang. I had it. It sucked. I was out of commission and felt completely tortured. I have a confession to make. I don’t know what it means to take a break. I LOVE to work. Well, I love to cook, coach and share my wisdom and it’s not really work when you love it, right? But I am such a go, go, go person. Gotta do this, gotta do that. And my body said, “hey girl it’s time for a vacay.” Also known as “be on bed rest and do absolutely nothing and catch up with the Kardashians on the couch.”

Krazy for Kale

I know, I spelled crazy wrong. But there is a sense of madness that ensues once you fall in love with kale. But of course, kale isn’t for everyone just like there is no perfect diet. For me, kale belongs in everything from smoothies to pizza. Yes. I said pizza. If I could have my ideal healthy but delicious pizza it would have kale all up on it.

Bomb Butternut Squash Soup

How sad is it that I have never made butternut squash soup in my entire experience in the kitchen? Well…I have a confession. Sometimes I do have a fear of trying new vegetables especially the squashes. I remember trying acorn squash and it was not good. Nope. Not one bit. So I was reluctant to try anything new in the squash department aside from zucchini.

This winter I have seen an abundance of butternut squash soup pictures and recipes. It really piqued my interest. So I decided, what the hell. Let me make my own version. I’m sure I will love it. It has to be good. Sure enough, I created something absolutely orgasmic. Creamy, rich, decadent. You’ll want to lick the bowl. I sure did.

Easy Veggie Enchiladas

Holy moly. Can you believe that 2014 is practically over? There are amazing opportunities for growth, goal setting, and to break out of that comfort zone. I am really looking forward to having my book come out in just a few months. It amazes me that I really have had this as part of my life’s purpose but only recently have tuned in to make space for this to become a reality.

As I continue to crank out this fantastic book, I am really busy in the kitchen testing out the oldies and improving those recipes to make them divinely delicious (and simple) for all readers. But I gave myself a break last week and decided I wanted to make enchiladas (something I have NEVER made before). I love the idea of having a brown rice tortilla drenched in a tangy, spicy sauce and having it bake until it melts in your mouth.
