Hellooooooo beautiful foodies!!!

I promise I haven’t fallen off the face of the Earth. To be completely honest with you, I’ve been eating the same effin shiznit for the last few weeks (rotating it of course and a few days of eating at my moms house and celebrating some birthdays, mine included). I also finished up my cleanse which seemed to take about 2-3 weeks. The preparation, the testing, the pre-cleanse and the post-cleanse.

So after all of this, I’m ready to get myself back in the kitchen.

We’re in this in-between place right now. It’s warm, the season is really kicking in and we’re getting some new sexy veggies in season. Asparagus anyone?!! And I can’t wait for the Strawberries. Those babies are coming soon. Like 2 weeks! YAAS!

As we are in limbo with the diff veggies coming into season,(and I’m tryna figure out what to make based off of seasonal availability) I’m sticking to the simple foods. This soup, basically the non-Indian way of explaining dahl, is one of those comforting and detoxifying recipes that’s easy to make and it really sticks to your ribs, keep you full and feeling sexy af.

Whoa…where have I been, right?! Sheesh. Okay, I will keep it real with you, I’ve been working diligently on my Spring Cleaning Cleanse program which starts on Monday, April 25 (click here if you wanna join in yo).

I’ve been in the kitchen trying every single recipe, making sure it’s super duper simple for those busy peeps and putting together a pretty gorgeous e-guide for my cleansers. Kinda nice of me, right? So I apologize in advance for my absence. I promise once the cleanse is over, I’ll get back to normal (sorta).

I am in the process of shifting to lighter eating (thank you Spring weather and Mother Nature for getting the memo) so all my recipes are focused on this. And to be honest, it gets a little boring. Who the hell wants salads all day every day? NOT ME. That sucks so I give myself the opportunity to change it up a bit, you know, like with this recipe for Zoodles (zucchini noodles, yes, it is a made up word but so what?!).

This recipe is…

Light.

Refreshing.

Full of flavor.

And takes only 10-15 minutes (or less if you quick like that).

Okay ya’ll this sweet potato obsession is REAL! I cannot get enough of these bits of heaven.

I find myself appreciating this starchy sexy veg more after my 21-day sugar detox. I’ve actually continued to find ways to enjoy some sweet potato in my life. And sometimes (well, most of the time) if it looks pretty to eat, it’s more fun to eat.

This particular recipe just came out of no where. I kid you not. I had just gotten home from the farmer’s market and was STARVING. I took a peek at what I had (aside from what I brought home- which happened to be a ton of greens on greens on greens). My fridge was practically empty. My pantry was decent. But I, of course, had a bazillion sweet potatoes, left over citrus cilantro dipping sauce and a ton of kale on deck. So what’s a girl to do? Put that ish together in a sexy roasted sweet potato boat.

Okay, I know you’re salivating.

Not Your Mama’s Tostones

Let’s take a moment to celebrate the fact that #1 this isn’t another sweet potato recipe (although I’m going to do one later this week, so ha) and #2 I’m OFFICIALLY DONE WITH MY 21-DAY SUGAR DETOX!!!!

Okay so technically I finished on Monday but I’m really excited that I can eat my millet bread and PASTA. I can’t forget pasta. I did miss sourdough bread and the Challah of Easter Sunday but…I think I can hang without it. For most of the detox I was really hangry (hungry + angry) and really just wanted to say f*ck it, I’m done, this is stupid. But something inside of me gave me a huge push (besides the internal countdown). I realized this was not forever. A sugar detox is not a way to deprive myself. It’s a way to become more aware and mindful of every part of my body. And I dig that.

Wait, so my point was what?

This sugar purge really gave birth to some freakin’ amazing creativity. I pulled recipes out of my utility belt daily and really focused on creating balanced meals (not 100% sure what that is yet, maybe 80% sure and I’m about 80% ok with that).

And that is where this tostones (fried plantain) recipe came from.

AND for my level of this sugar detox (click here to learn more, in case you’re curious), I was allowed extra starchy veg. Sweet potato was already on my list and on the menu prettttttty much errday. So the plantain became my friend.

I’ve had plantains smashed, fried, molded into a sexy mofongo (look it up- it’s amazeballs), made into crunchy chips. I just never made them myself.

The KEY is to have a vibrant, tangy, citrus sauce to dunk these crispy thangs in.

Sweet Potato Brekkie Bowl with Tahini Dressing

Can you tell I’m just a wee bit obsessed with sweet potato?

Last week I was such a grump. Aside from the unfortunate combination of PMS and detoxing, I was freakin’ hangry as f*ck. I LOVE food so if I have to overly think and overly strategize my food it takes away from my fun and leads to an unhappy G.

So far I’m on day 11 of my sugar detox with just 10 days to go. And I’m feeling good today but last week I was not nice. And the only thing that really saved me besides an entire avocado every single day: sweet potato.

Sweet potato and I are boos. We go way back. I didn’t like them much as a child but now that I know how to roast them and even make a hash out of them, there is no going back.

Now this recipe came out of nowhere.
