Sweet Potato + Black Bean Casserole {Heaven in your mouth}

I must really really love myself. I made the bold decision to do a 21-day sugar detox. But wait. “G, don’t you already treat your body so good and don’t eat many sweets or use sweeteners?” This is true. Really true. Still…sometimes our bodies just need a break and need us to switch things up a bit.

See now this is no ordinary detox. I’m not eating BREAD or grains or my favorite fruits. I AM THE QUEEN OF AVOCADO TOAST! And I love rice. So this is no ordinary cleanse and this also means no pineapple or berries but I can have sour/pungent fruits (grapefruit or green apples- this tricks yo brain into thinking you’re having a sweet treat and lays those desires for sweets to rest).

It’s a ton of juggling but really an opportunity for me to train my palate and give my body a nice break. And when the poops are good, and the energy feels good, it’s aalllll good man.

Okay but seriously, the real point of this post is the fact I’ve had to get creative with my recipes. This recipe gets better with age (like a day or two after you make it) and it’s a man-pleaser (meaning my man gave it his 2 thumbs up). I dig that this combines a ton of veggies (both starchy and not starchy), a gluten-free grain (millet- hell to the yes) and beans (hell to the yes).

It don’t get no better or no sexier than this baby…

Sweet Potato + Black Bean Casserole {Heaven in your mouth}


Makes 4-6 servings (depends on how much you want)
Total time: 45 minutes
What You Need:
  • 1 cup cooked millet (follow the package instructions, it’s easy peasy)
  • 2 large sweet potatoes, cut into 1/2″ cubes
  • 1-2 cans of black beans, rinsed
  • 2 cups of spinach (baby spinach works)
  • 3 cloves garlic, smashed and minced
  • 1 shallot, chopped
  • 2-4 tablespoons coconut oil, melted
  • 2 tablespoons grapeseed oil (or olive or butter, whatever you want)
  • 1/4 cup cilantro, roughly chopped
  • 1/2 cup salsa (without sugar)
  • 1 tablespoon hot sauce (try Frank’s, there’s no sugar)
  • Salt & pepper
  • 1 cup cheese of choice (get good cheese, organic pepper jack is the bomb diggity)
How You Make It:
  1. Preheat that sexy oven of yours to 375 degrees F.
  2. In a deep dish baking pan (think casserole pan), combine black beans, spinach, salsa, hot sauce, millet and sweet potato. Pour melted coconut oil over the top and massage with your hands.
  3. Season generously with salt and pepper.
  4. In a skillet (over medium heat), warm up your grapeseed oil and saute your garlic, shallot and cilantro until fragrant. Season with salt and pepper.
  5. Pour this sexy mixture over your millet, potato and bean mixture.
  6. Add more hot sauce if this pleases you (it pleases me, so best believe I did this).
  7. Cover with cheese of choice.
  8. Bake that heavenly casserole for 30-35 minutes or until potatoes are tender and cheese is melty and awesome.
  9. Serve with AVOCADO!!! Squeeze a bit of lime and you’ll feel like you’re having something decadent.
