Ingredient of the week: arugula. I’m in love with it. It’s peppery, pungent and delicious and jam packed with phytonutrients. It also gives you Vitamin C and Calcium for added benefit. I’ve noticed many people aren’t fond of arugula but if you mix it in a salad (and replace that nasty iceberg lettuce-which is pretty much empty calories) you’ll be delightfully impressed.
