Simple Sexy Stromboli

Last year at a company Christmas party potluck my beloved intern Jillian brought in this ooey gooey cheese fest hidden in layers of crunchy, doughy heaven. It was reminiscent of pizza but made me feel like I was indulging in a calzone (but not the ones from the pizza shop, I’m talking about the HUGE ones from college that were bigger than the size of my face) minus the ricotta.

There is something comforting about cheese. For the past 2 years I was completely convinced that being fully vegan (and probably being a stank b*tch about it) was the right way to go. But after some serious soul-searching and letting go of self judgment, I decided cheese is actually okay. I fully believe in the power of treats. By allowing ourselves a judgment free treat (I said “a treat” not multiple treats or a smorgasboard of treats) we are really allowing our souls to feel completely nourished. Why, you may ask? Well, simple. Our souls don’t like to be restricted. Unless you want to feel like a crazed, self judging, self loathing person, allowing yourself that small piece of chocolate, a macaron, a mani-pedi, or something that makes you feel uplifted and joyful is such a wonderful thing.

Okay seriously t’is the season for some grounding, hearty goodness. With all the holiday craziness going on it’s really important to find some footing and keep ourselves stress free. What good are we when we are stressed anyway? I know I’m not my best self when under stress which is why I am making it my mission to breathe and meditate for at least 5 minutes every day.

Easy Peasy Coco’ Curry

I don’t like to use the term “curry” loosely. Not everything swimming in a sauce in Indian cuisine is considered a curry. Look on a menu at an Indian restaurant and you won’t really find that word listed anywhere. The word to me is just not sexy even though the flavors that are born from adding curry powder to various dishes can ultimately lead to something sweet, spicy, cozy, comforting and warming. Quit Blaming Others For Your Stuff

Have you ever noticed that when you feel some type or way or have a reaction towards something or someone, it’s automatically that person or that situation’s fault for making you feel that way? Okay, I know that sounded like a mouthful. But let’s think about it for a second. How freaking often do we blame others for how we feel or the reactions we have? ALL THE TIME. Why? Because it’s so easy to blame someone or attribute your feelings to someone else or something else instead of realizing that HELLO you are the one who feels these things because um…duh you are human and you FEEL THINGS.

Mexi-quinoa Casserole

Having my own apartment really gives me the urge to invite people over to cook for them. I invited my best friend over last week and was thrilled to be able to cook for her. This brings me great joy, especially now that I have adequate counter space and proper tools, which is so essential when having a stress free and meditative experience while cooking. But really the best part is sharing love through food. Seriously…food is love. Let’s love love love love more.

This cold weather really has me in soup mode so I was in desperate need to create something comforting, warming, delicious and not in broth form. Voila, this casserole was born. The best part? I’m pretty sure you have these things on hand and in your pantry making this an extra cheap, easy eat for dinner any day of the week. Grab that casserole pan and let’s get cozy!
