I really am a nutrition nerd…I fell in love with this new version of the food pyramid now called “My Plate.” It illustrates the five food groups as they should appear on our plates (not necessarily all at the same time): half vegetables and fruits, another half grains/whole grains while making protein and dairy the smaller portions. Looking for a simple yet delicious dinner? This literally took me 10 minutes to make. Vegetarian meatballs (cook according to package instructions then let sit in marinara for a few minutes as you heat the sauce up), fresh spinach fettuccine (this takes 4 minutes to cook) and some of my favorite jarred marinara sauce (aside from the brand Victoria) = a delicious and healthy dinner for those lazy days.ย
