When it gets hot out, I must admit my appetite slowly disappears. I am constantly on the search for foods that are light, refreshing and also filling. My beloved Aunt Lisa is the person who enlightens me on these recipes from time to time since she’s lucky enough to experience summer like weather all year round (she’s a California girl). I usually take my Aunt’s recipes and tweak them (like I do for everything) to my liking.
This salad is delightful and simple with complimenting flavors. The highlight and star of this dish aside from the purple kale (which is often hard to find- but Whole Foods has it!) is the basil olive oil. It costs about $10 but the flavor is unbelievable.
For this recipe I’m not going into much detail. It’s so simple and flavorful, the steps are incredibly easy and customizable. Salad’s are only good if you put what you like in them. So bring on those veggies!
What you need:
1 bunch of purple kale (or red), leaves torn off stem
2 vine ripe tomatoes, sliced
1 green bell pepper, sliced
1 stick of celery, diced
1/2 a shallot
2 cloves of garlic
3 tablespoons of basil olive oil
2 pinches (or more!) of pecorino romano cheese
Sea salt, black pepper
How you make it:
1. Combine veggies in a big bowl. Whisk basil olive oil with garlic and shallot. Season with sea salt and pepper. Pour generously over the salad, sprinkle cheese and enjoy!
Feel free to add some avocado, carrots, snow peas or whatever veggies you love!
