One of the most common questions I am asked is “how can I eat healthier?” I come across people who love meat but don’t know which vegetables they like and often complain about the cost of eating healthy. Many want to lead a healthier lifestyle to lose weight (or even maintain it) but want to jump right into a diet which really is only a temporary solution. Like I’ve said time and time again (and nutritionists, health & wellness guru’s will back me up on this) DIETS DO NOT WORK. Temporary solutions only lead to temporary results.
The first step in trying to live a healthier lifestyle isn’t cutting out the bad foods, it is slowly eliminating them by adding in healthier alternatives. Just a little reality check, yes, french fries are made from potatoes but NO that does not count as you eating vegetables. Before jumping into the healthy lane (and if you’re going veggie, this is also important- slowly stop eating meat and increase your vegetable consumption and substitute different forms of protein) introduce more fresh vegetables (none of that canned stuff), fruit and non-processed foods.
One thing I really recommend is finding a farmers market, hitting the produce section of your grocery store and getting to know the vegetables. Yes, I said get to know your vegetables. By getting to know your vegetables and the healthy alternatives you like, you can plan meals. By planning meals and making a list (super important!) you can make smart meal choices that are affordable. Experiment. Try new things. You really can’t get enough vegetables in your diet.
As you slowly introduce more healthy goods into your life, you can decide what works for your body and doesn’t. I don’t believe in eliminating things. I’m more of a pro-moderation person. If you are craving something, for example, I try to identify what exactly I’m craving. Is it something sweet, crunchy or salty? Whatever it may be I try to find a healthier alternative to satisfy that craving.
The second step to leading a healthy lifestyle is getting up and getting moving. Sure, you can eat healthy and still look great but being active goes hand in hand with this lifestyle. The two must not be separate! Eat well, move that body and you will feel amazing (trust me). No, you don’t have to jump into Insanity right this second but grab a friend and go for a walk.
There’s no need to be afraid or even hesitant to start this new lifestyle. You don’t have to completely eliminate the things you like, just crowd them out with the good stuff.
Take baby steps when starting this new way of life. Your body, mind, soul and of course, your health will thank you.

If you love breakfast as much as I do, finding the time to spoil myself for breakfast is definitely like a piece of heaven. A friend of mine brought me about a dozen organic peaches and I decided tossing them in some homemade pancakes would just be the bees knees. Blueberries and peaches seem to go together. The combination is sweet, tart and comforting. It took me about 15 minutes to make about 4 jumbo pancakes.
Here is a recipe for the most simple (and DELICIOUS) pancakes ever (inspired by Chloe Coscarelli)!
What you need:
1 c. all-purpose flour
1 Tbs. baking powder
¼ tsp. ground cinnamon
¾ c. coconut milk (or soy or almond- coconut is prob the best)
3 Tbs. maple syrup, plus extra for serving (I used a little bit of agave nectar instead of so much maple syrup)
8 oz. fresh blueberries & 3 peaches, diced into small cubes
Vegan Butter (for topping)
How you make it:
In a large bowl, whisk together flour, baking powder, and cinnamon. In a separate small bowl, whisk together milk and maple syrup. Add the liquid to the flour mixture and whisk until just combined. Do not over mix; the batter should have some lumps.
Lightly oil a large nonstick skillet or griddle and heat over medium-high heat. For each pancake, pour ¼ cup of batter onto the skillet and sprinkle blueberries on top, if using. When small bubbles appear in the center of the pancake, it is time to flip it. Let it cook on the other side until lightly browned and cooked through, about 1 more minute. Repeat with remaining batter, adding more oil to the skillet as needed. Serve pancakes with warm maple syrup.

I gobbled these amazing pancakes up so quick I wondered where they went.
Yes, they are THAT good.

My breakfast this morning:
Steel cut oatmeal with grade A Maple Syrup (sorry Aunt Jemima, you just don’t cut it. Besides, you’re not REAL maple syrup. I like the real stuff tapped from the tree. YUM!) and fresh blueberries.
I must admit this was amazing and by far some of the best oatmeal I’ve ever had. I’ll definitely make it again, just more thick.

A simple yet tasty salad (without lettuce!). Yes, salads are much more than the usual lettuce, tomatoes, cucumbers, and dressing. Getting creative with salad not only makes it delicious, it makes it fun! I love concocting something random and tweaking it. Then again, I do that with everything I eat. I am familiar with flavors I like and am learning to pair things that compliment one another.
My amazing Aunt Lisa sends me recipes quite often and this particular salad happened to be one of them. Once you see how simple this recipe is, I promise you’ll make it your go-to summer time salad.
What you need:
1 ear of corn, roasted (you can do this over a flame if you don’t have a grill)
2 avocados, diced into cubes
1 yellow/orange tomato, diced
1 red vipe ripened tomato, diced
1 can of organic black beans, drained and rinsed
2 tablespoons of finely chopped cilantro
Juice of 1 lime
Salt, pepper, garlic powder & chili powder (a teaspoon of chili powder gives it a kick)
How to make it:
1. Combine in a bowl. Toss gently. Season with salt, pepper, garlic powder and chili powder.
2. Eat!
If you’re an avocado fan (like I am) this is the perfect salad for you! Avocados are loaded with nearly 20 essential nutrients, like fiber, potassium, Vitamin E, B-vitamins and folic acid! Tasty and good for you? What a fabulous combination!
