My dear readers

My sincerest apologies for not posting anything I’ve made or eaten these past two weeks. I just started a new job and am currently writing a freelance piece for Parenting magazine. It has definitely taken up my time and I haven’t cooked anything inspiring. Since the week before last was my birthday I went out to eat a few times and this week was the start of my new job as well as my boyfriend’s sister in law’s baby shower. I am putting my foot down and making sure I get into the kitchen this week so I can provide you all with some inspiration.

Any of my lovely readers get a chance to try Cross Fit or the Dirty Girl Mud Run?

Well those are two things on my summer list on top of enrolling in nutrition school. I can’t wait to jump into the world of fitness, nutrition, health and wellness. All of course with a vegetarian take on the world. 

I’ll definitely keep you posted on my progress.

Paella Vegetariana from MamaJuana restaurant. Interesting flavors and choice of vegetables (zucchini, yellow squash, asparagus, arugula, roasted red peppers). The rice was a tad buttery but still delicious. For the price I think it was semi-worth it. I would have preferred a little more pizzazz. I was not impressed with the restaurant’s service (the location on 48th and Lexington) and their lack of vegetarian options. One vegetarian option on the entire menu aside from salad is rather disappointing. Though my dish was good, it wasn’t memorable and I don’t see myself going back unless they include more veggie friendly options.Â
