A little bit of inspiration for my vegetarians: be open to trying new things. There is plenty to eat out there. Meat is just ONE food group and is NOT the main one. Find veggies, fruits, grains, cheese, beans etc that you like. Food is only boring if you make it that way. Find fun ways to spice it up and make it your own.

Dinner tonight: Roasted zucchini and yellow squash, baked tofu and baked sweet potato with vegan butter, cinnamon and a bit of brown sugar. Yea, it was hot out and I put on the oven. Luckily this only took about 30 minutes to make!Â
